Madeleine de Proust Patisserie – Carlton – a humble beginning to a sweet symphony for a famous French treat

Nestled along Lygon Street, I had the pleasure of visiting Madeleine de Proust Patisserie on its second day of opening. A warm welcome from the owners set the tone for an experience that would prove to be a delightful exploration of the world of madeleines, those small, shell-shaped sponge cakes originating from France.

Dedicated entirely to these delectable treats, the new Carlton bakery offers a feast for the senses with desserts that rival fine dining creations. The menu showcases a fantastical array of madeleines, ranging from basic to exotic flavours, each a testament to the artistry of the owners HyoJu Park and Rong Yao Soh’s passion and their staff.

The madeleine offerings span a spectrum of prices, from $6.5 to $14, ensuring there’s a treat for every palate and occasion. Intriguing options include the Earl Grey Dulcey for $9, Pandan & Coconut for $7.5, and Black Sesame for $9. A standout creation is the Poppin’ Corn, priced at $14. This visually striking treat resembles a real mini corn cob, thanks to delicate hand piping that meticulously recreates each kernel. The attention to detail is not just visual; it probably extends to the taste and texture, ensuring a memorable experience.

For those indulging in a trio of madeleines, the specialty box is a thoughtful touch, preserving the moist and delicious qualities of these treats. Witnessing the creation of these delicacies in the kitchen adds an interactive element to the dining experience, providing insight into the craftsmanship behind each bite.

  • Yuzu, Chocolate and Butter & Lemon Honey for $6 each and Black Sesame for $7.5
  • 'SSUK', Walnut & Cassis, Pandan & Coconut, and Earl Grey Dulcey
  • Gold Nugget, Tipsy Arabica, Poppin' Corn and Pistachio

Madeleine de Proust Patisserie doesn’t limit itself to sweet treats alone; it also offers a selection of coffee, with oat milk available as an alternative. Opting for the Mocha with Oat Milk, I found the beverage to be a satisfying complement to the rich and varied flavours of the madeleines.

Bringing home a selection of madeleines—Yuzu, Chocolate, and Bitter Lemon Honey, priced at $6 each—I discovered that there was a desire to make each one unique and special. Despite the passage of time from purchase during midday to after dinner, each madeleine retained its moist and delectable qualities, a testament to the commitment to quality and freshness.

Madeleine de Proust Patisserie is a welcome addition to Lygon Street, offering a haven for those with a sweet tooth. With a diverse range of madeleines, from the exotic to the traditional, and an emphasis on craftsmanship and quality, this patisserie invites patrons to embark on a journey of taste and texture. Whether enjoyed on-site or taken home in their specialty box, each madeleine is a work of art, leaving a lasting impression that lingers on the palate.
