A Spacious, Vibrant Layout
The restaurant occupies two combined shopfronts, forming an expansive, labyrinthine layout that accommodates a significant number of diners. From the moment you step inside, you’re greeted with the lively hum of chatter and the scent of delicious food. The tables extend deep into the space, leading to a charming garden area at the rear. The sheer size of the venue reflects its popularity, with nearly every seat filled during our visit. It’s definitely advisable to book in advance, though we managed to secure a spot without a reservation by sheer luck.

The Bun Bo Hue Steals the Show
We started with their signature Bun Bo Hue in a medium size ($18), and it quickly became evident why this dish is a standout. The bowl was generously filled with a variety of meats, from tender beef slices to hearty chunks of pork, all swimming in a deeply flavorful broth that perfectly balanced spicy, tangy, and savoury notes. The noodles were cooked to perfection, providing a satisfying chew, and the accompanying fresh herbs elevated the dish further.
Other Dishes That Impressed
We also opted for the Combination Meat on Egg Noodles, which came with an impressive array of mixed meats, seafood, and vegetables, all coated in a luscious, savoury gravy. The dish was hearty and comforting, showcasing the kitchen’s ability to master rich, complex flavors.
Our friends joined us in exploring the menu and ordered the Vietnamese Pancake and the Stir-Fried Beef with Lemongrass. The pancake, with its crispy exterior and soft, savoury filling, was a delightful textural contrast. Paired with a tangy dipping sauce, it was a favourite at the table. The stir-fried beef was equally satisfying, with tender slices of beef infused with the fragrant aroma of lemongrass.

A Bustling Atmosphere
Co Do Sunshine’s popularity is undeniable, and its lively atmosphere is a testament to its reputation. The restaurant was brimming with diners during our visit, creating a vibrant and communal dining experience. The service was efficient, ensuring that dishes arrived promptly despite the packed house.
Final Thoughts
Co Do Sunshine is a gem on Hampshire Road, offering authentic Vietnamese cuisine that lives up to the hype. With its standout dishes like the Bun Bo Hue and its inviting atmosphere, it’s no surprise that this restaurant is a favorite among locals and visitors alike. While booking ahead is recommended to avoid disappointment, the effort is well worth it for a chance to enjoy the delicious offerings of this bustling Vietnamese eatery.
